Remise du Prix Goncourt How many references do you have at Drouant?
  AW : Today, 600 references and about 6,000 bottles since I repatriated the cellar of my three-star restaurant in Strasbourg to Drouant. 
     
Remise du Prix Goncourt Why did you have to import the Buerehiesel cellar to Drouant?
  AW : It’s a memory from the Buerehiesel that stays with me; I’m glad to have it with me. I could’ve sold it at auction, but I’d rather offer them to my Drouant customers at exceptional prices.
     
Remise du Prix Goncourt What does this new cellar contribute to Drouant?
  AW : t contributes 35 years of wine buying done with passion and love! It expresses my personal vision of wine; these are wines I love.
     
Remise du Prix Goncourt What are they?
  AW : Bottles I began buying in 1970, bottles I’ve believed in and which you can’t find on the market today, like the Rhône Valley Hermitage la Chapelle 1978, in Burgundy Coche Dury, Meursault Lafon, Romanée Conti, Richebourg, La Tache, in Bordeaux Mission Haut-Brion 1966, Château Yquem 1976, some old Chartreuses from Tarragona 1970… Names that sing hymns to French winemaking.
     
Remise du Prix Goncourt Are you going to introduce these bottles at your wine bar?
  AW : Of course if one of our bar customers wants to select one of these bottles, we’ll bring him our cellar list. But the idea behind the bar is to introduce vintners from all over France. To feature a wide variety of appellations, our favourites, our most beautiful finds, the discoveries that we want to share with our customers.
     
Remise du Prix Goncourt Do you have a pricing policy for the wines presented at the bar?
  AW : Of course, we want the featured wines to complement our menu. In order to stay in the spirit of discovery, even in terms of price. Plus, with our Happy Hours, which we call Aerospace, our customers can discover some great wines at very modest prices.
